It does not help.

Hiding information does not make the collection itself legal.

 

GDRP does not require you to delete data, stop you from collecting data, nor prevent you from making money from data.

It does require, that your describe (exactly), what you are doing, why each piece of information needs to be handled in this way, and when the date will be deleted.

 

Pretty easy.
